A measurement at every decision that sets the price

As olives ripen their composition shifts. Darker, mature fruit carries more oil but higher free fatty acids and fewer polyphenols. Green fruit yields less oil, with a better polyphenol profile and lower acidity.

Each of those decisions, when to pick, how to run the press, how to grade the result, changes what the oil is worth.

01. Harvest timing

Track oil content, moisture, free fatty acids and polyphenols on the fruit at the tree, and pick when the balance matches the oil you intend to sell.

02. Extraction control

Check the fruit at intake and the olive pomace paste residues following the batch through malaxation and decanting, adjusting the process to the material actually coming in.

03. Final classification

Verify acidity, K-values, peroxide value and several other quality parameters on the finished oil, and confirm the grade before it is bottled and labelled.

Pick at the right moment, price at the right grade

Polyphenol content and FFA drives both antioxidant activity and market value. The highest-quality oils can command ten to twenty times the average market price, so knowing where a batch sits before it is pressed is what separates a premium extra virgin from an ordinary one.

Olives are scanned directly. For the oil, accessories extend the same handheld to liquid samples.

Transmission Fixture

Fast, real-time analysis of liquid samples, for oil straight from the decanter or from the tank. Integrated tungsten lamp, standard cuvettes (0.5 to 10 mm), and thin films or filters up to 3 mm thick.

Liquid Sampling Kit

A set of cuvettes and sample-prep tools for consistent, repeatable scans on oil alongside the transmission fixture.

Window Collar

A wide-aperture optical window that mounts on the device face, for continuous scans across a batch of fruit or a filled tray.

FAQ

Questions we hear from olive producers

Can I measure olives directly on the tree?

Yes. The device is handheld and wireless, and the fruit is scanned where it hangs, with no picking or preparation.

Does the same model cover fruit and oil?

The validated model covers both, switching by sample type in the app. Parameters differ: oil content and polyphenols on the fruit, acidity, peroxide value and several other parameters in the oil.

Can it be tuned to our cultivars?

Yes. Our chemometrics team adjusts the model to your cultivars and extraction process from your own reference samples, paired with certified lab results.

What about authenticity and blends?

Total sterols and waxes are measured as authenticity indicators, alongside MOSH and MOAH for mineral oil contamination.

What support is available?
